Daily Dinner (13): A bowl full of warmth

There is a generous amount of nip in the air...and driving down to the temple this morning, I noticed the leaves have started turning color as well. Though expected, the morning chill has been somewhat hard to take. I feel like this summer went by too fast...

And then yesterday, when the girls brought home a pumpkin to carve, it definitely felt like winter (or autumn) was here to stay. I had come back from work, frozen to the bones...a couple of hours in a walk-in cold room trying to run an assortment of samples through will do that to anyone. So frozen, and craving the molten warmth of a nice, home made soup; this was our dinner last night.  A bowl of warm soup with breadsticks.

Spinach, Tomato and Carrot Soup.

For the soup:

  • A fistful of fresh spinach leaves- washed
  • A large jersey tomato
  • A fistful of baby carrots
  • A little piece (about 1/2 inch) of ginger
  • 3 cups of water
  • Salt and black pepper to season.
  • Butter 1Tbsp (Optional)
  1. Cook it all together till carrots are tender- I use a pressure cooker to do this.
  2. Cool, then blend the veggies together.
  3. Strain through a wire strainer. 
  4. Season with salt and pepper. Stir in the butter right before serving.
My two cents: This soup was a winter-staple at home in Delhi. Carrots and tomatoes came aplenty this season at very affordable rates; and my dad was a stickler for spinach. We pretty much had this soup before dinner everyday. Not always fun when you're a child; but it grew on us. It's working the same way with my girls- they started out by not being huge fans of the dark green color; but now they drain out their cups without complaints. That's all I ask for- meeting their veggies-of -the-day quota :-)
