When my Soup became Dinner!!


Scenario one:
Is that lentil soup?”
No- it’s sambhar ”
What’s it made of?”
Lentils, tomato, onions, water, spices…..
So…it IS lentil soup”!

Scenario two:
What do you do to get everyday protein if you don’t eat eggs or meat”.
All our meals have a bean or lentil dish. That’s protein”.
What kind of lentil dish?”
I cook lentils with water, saute onion, tomato spices etc, add to lentils…
So you make soup
No….it’s a dal. To eat with rice or bread
But it IS a soup”!

Over time, I figured it was easier to to consider my dal as “lentil soup”when eating lunch with colleagues in US.  But, somewhere, at the back of my mind, a soup was a starter- served at the beginning of a meal. The mere mention of soup takes me back to my mom’s  soups- restricted to tomato soup; carrot & tomato soup or spinach-carrot-tomato soup; all spiced with ginger, cumin and salt. She cooked her vegetables, pureed them and then strained them before serving. We’d all get a small bowl of it about 30min before dinner during winter. They were all clear liquids, meant to enhance appetite.Soup as main course; or a full mean was an alien concept.

Get Grilling - without the grill!!


One of the coolest things about this new work place I'm at is the awesome cafe. Not only does it promote healthy eating, but the food is delicious too. And the very first thing I noticed was the well-stocked salad bar area. Ever since I started with a  salad-at-lunch routine, keeping a meatless salad interesting, and satisfying, has become quite a challenge. So I took to peeking in the cafe's salad bar to glean off some ideas outside of what I do to my salad.

One of the very first things I noticed was a bunch of grilled vegetables. Duh! Why didn't I think of it.

"Because you don't have a grill pan, and it's not grilling season yet", pat came the reply from the devil within. Of course!!

Around a month ago, when the weather finally started turning spring-like, I asked A if he would get the grill cleaned and ready (we have a small, outdoor gas grill that I have no idea how to use....). He nodded, ....and that was the end of it.....

Taking Navratris West- with Sphagetti Squash

I have compiled a few of my go-to Navratri recipes from 2013 here and from 2012 here.

But me being me, what do I do when the stomach’s growling with hunger, and I want something “good” to eat while fasting? Sometimes, “good” for me is just another way of saying “out of the mundane routine”. Off and on, I try recipes and sometimes tweak it a bit to make it adhere to rules of my fasting. This year has been especially trying since we couldn’t get to do Indian grocery before the fasting week began. And so I got stuck with improvising.

I did have a little bit of Sama ke chawal and singhora flour. Not enough to tide me through the week though. So I have been living on whatever I can conjure up with groceries I can buy from local stores. One day each of aloo ki sabzi and zucchini had me wanting something “good”. The third day to satisfy my wandering mind and growling stomach; my dinner was a clear spinach-tomato soup and this  wannabe salad with Spaghetti squash – a fun vegetable that looks like spaghetti after it’s been cooked.

Daily Dinner (12): Simplicious Yakhni Lauki

When I was in bed sick last year,  friends around us took care of feeding me and my family for a very long time.  Although I was on restricted diet, A got a taste sampler from all over India.  After the first week of liquids only, when I could eat semi-solid foods, a friend called and told A that she was going to bring me some kadhi, and Yakhni in the evening.  

 "Yakhni? Why didn't you remind her we're vegetarians?" 

"She must know- mustn't she? We've met at so many socials and broadcasted this fact to everyone.
Do you even know what Yakhni is?"- A retorted.

" Of course I know what that is- Yakhni is a Kashmiri meat dish. They even make it during Shraadh ceremonies (ancestor worship ceremonies that are very strictly satvik in my place- which meat is definitely considered not). And even the Kashmiri pundits (priests) eat it. She's Kashmiri- maybe she thinks that if pundits eat it,  we'll eat it too. I don't think Kashmiris really get what we mean by being vegetarians"

"All right, don't fret it", A said. "When they come, we'll ask her again."

(Hi)Story of Spaghetti....Squash

There is a history between me and Spaghetti Squash: a fall vegetable that looks like a smallish, oblong fruit I knew of as 'phoot (or fruit) kakdi' in Rajasthan. My extensive googling has not  got any hit to explain this fruit (the phhot kakdi; I mean) to you. So, to draw for you a mental picture, imagine a dull orange colored obling/ elliptical, smooth skinned fruit (sometimes with dark brown stripes along its length), about 8 inches in diameter at its widest. When cut open, the insides reveal very thin skin,   bright orange, melony-flavored flesh and a core that looks just like a melon. The taste, is somewhat in between that of a kakdi (not cucumber- but the long, light green kakdis of North India), and a not-so-sweet melon.  Or, if you know a spaghetti squash; then imagine that on the outside and a not-so-sweet melon on the inside.

Two of a kind- Koftas Baked & Fried


Ever heard of a saying: 'Necessity is the mother of invention'. Never did it ring so true  for me as this past month. Just about two-weeks of a restricted diet was wrecking havoc on my sanity. How long can one survive on moong-dal khichdi and bland, soupy lentils- I ask you. So as soon as the doctor mentioned returning to a regular diet- I was escatic.Except 'no fat, and low spice' rule sort of dampened the enthusiasm a bit. I realized that I'd have to come up with some way of keeping abreast with family food, along with taking care of my delicate digestion.

Summer Sizzlers: Tandoori Sabzi Skewers

One of the last weekend get togethers I hosted before my impromptu hospital visit was for some friends that we hadn't seen in a long while. Every time we set up a meet-together, we had to rethink our plans - either at their end or mine. So this time, when they asked if we could meet, I agreed; disregarding the fact that A was away that entire week on a work-related trip.  As Saturday came nearer, my anxiety mounted. A wasn't coming back till late Saturday afternoon, which meant that I'd be on my own for the preperatory phase of this get together. Not to mention that the summer was really heating up. Not really feeling up to conjuring up an elaborate Indian meal; I decided leave the responsibility of the main meal for A and his outdoor grill. My menu was going to be:
